Health, and a lack thereof

I'm going back to university tomorrow, and pretty soon after that I'm going to start looking into transferring to Cardiff university. I know it's a big decision, but I've been praying about it; and every time I pray I get more sure that it's a good thing to do. Also, I really really want to!

In other news, I always get a bit wheezy when I have a cold, and this time it got so bad that I was out of breath after I went downstairs. That's not on, so I've been to the doctor and he's given me some comedy pills that look like something out of Doctor Mario.

Quite large, aren't they. Still, I never have any trouble swallowing, so nothing to worry about there. I'm also back on an inhaler, which feels very much like a step backwards as I haven't used one in about 8 years.

Yesterday, before I went to the doctor's, myself and my younger brother and sister braved the icy wind to go to the Co-op and get some FROOTS AND VEJ. Our house being lacking in both. I just got a bit vexed the other night when we went to the chippy for the 2nd time in the brief time I've been home. The chippy had ran out of salad so I asked my parents if we have any... of course not.

SO. Tonight I am making the world's best salad, with eggs and grapes and lettuce and brie and red onion and... other things too!

  1. Y'know, I am an enthusiatic salad maker, and I've never thought to put grapes in! That's go SO well with the Brie it's not even funny...

  2. Funny you should ask that :) This one was based on one my boy made with me in Cardiff in the summer. Ingredients run as follows:

    HOT SALAD (serves 3)

    + Olive oil
    + Salt
    + Round lettuce
    + Feta cheese (1/2 pack)
    + Small amount of Mozzarella
    + Camembert cheese
    + Pack of salad
    + 2 pieces of bacon
    + 1 chicken fillet
    + Green grapes
    + New potatoes

    Stir fry the chicken, boil the new potatoes, grill the bacon and melt the mozzarella on top. Best salad I've ever had in my life. We ate it barefoot in the park by his house <3

    The one I made for my family was much simpler, but we had spicy chicken tikka stuff as well. Absolutely killer.

  3. Anything with a range of strong flavours, and vivid colours really! Presentation is as important as the flavour *nod*.

    Serves 2-3 I guess!

    3 slices of bacon (unsmoked)
    400g diced chicken
    grated cheese (Double Gloucester preferable)
    mayonnaise
    peppers
    sweetcorn
    my special diced fried potatoes
    mixed salad (minus tomatoes, ugh)
    EV olive oil
    grated carrots.

    Prepare a nice bed of lettuce on the plates while you fry the chicken. Before you put the chicken in to fry though, finely dice 3 or 4 small potatoes, coat in oil and a tiny bit of salt, and fry until nearly crispy. They should be perfect when the chicken is done. Grill the bacon, and layer the chicken, bacon, and the rest of it. ensure the cheese and mayo are kept seperate (the mayo works best as a base for the chicken to keep it on the lettuce). Arrange the other bits to your preference, and drizzle a tiny bit of pepper and oil on top.

  4. Salad with grapes in is definitely A Good Thing :)

    Summer salads are so good, I like to get pasta and pesto and use that as a warm base, and add finely chopped leaves and crumbled hard boiled eggs, maybe some diced chicken breast
